Why La Chaudière cheeses are lactose-free

La Chaudière organic cheddar cheeses are made with organic raw (unpasteurized) milk. It is 99.5 to 99.8% lactose-free. Agriculture Canada allows us to put the following mention on our labels: "Less than 0.5% lactose".

The lactose, normally found in the milk, is digested during the aging of the cheese by the bacteria present in the milk. The older the cheese is, the lesser the amount lactose will be. The Mild Cheddar contains traces of lactose, whereas the Medium (aged about 8 months), the Old Cheddar and the Extra Old Cheddars (aged one year to two years) are lactose-free.

La Chaudière therefore offers a healthy and savoury alternative to people suffering from lactose intolerance.
